Brussel Sprout Carbonara


 

Brussel sprouts and bacon... Are you lovers from opposite families, a la Romeo and Juliet? Are you unlikely partners like Starsky and Hutch, one straight laced, one a little wild, but both focused on getting the job done? Are you soul mates, destined to be together no matter the obstacle? Whatever you are, you work beautifully together! A simple Italian dish that relies heavily on the inclusion of bacon is pasta carbonara. I decided to bring in bacon's old friend brussel sprouts into this classic dish to make for a fun twist on a classic dish. The result was a colorful and flavorful pasta dish that was as fun to make as it was to eat.

Mac and Cheer?


My good friend Erin was planning a holiday party, and she asked me to make something for the food spread. Erin throws a really mean party, so I of course obliged and wanted to make a crowd pleaser. One of my favorite indulgent dishes is mac and cheese. While some people shy away from making a really unhealthy mac, I figure it is the holiday season, so what's a little more butter, bacon, and cheese going to do to our already expanding waistlines. The party was a lot of fun and the mac and cheese was a tasty addition to Erin's spread of ham croissant sandwiches, vegetable platters, quiches, and dessert treats. We all gathered around the tree and drank ourselves silly; a truly successful holiday party.

Fried Brussel Sprouts with Cranberries and Bacon




All parts of the title of this dish are delicious. Brussel sprouts are always a favorite side of mine, and combined with the rich flavor of bacon and the tart flavor of cranberries, they are a formidable dish. Now take that, and fry it. Yeah, I went there. The one part of this dish to be careful about is not crowding the sprouts while frying. I learned this the hard way because I was pressed for time and didn’t divvy up the sprouts in enough batches. In my impatience, the sprouts weren’t able to really crisp up while frying. The dish was really delicious, and the flavors were very complex, but it didn’t have the crispy component I was looking for when I dreamt up the dish. Next time, I will know, DON’T CROWD THE BRUSSEL SPROUTS!

Empty Fridge? Breakfast Challenge!!!



Sunday morning: Your mission, if you choose to accept, is to create a delicious breakfast using only the food currently in your kitchen. Your available supplies include: 4 eggs, polenta, parmesan, celery, garlic, herbs, tomato sauce, bacon. Good luck!
With only the above ingredients, I was able to make the following brunch:

I started by braising the celery. I sliced it and then sauteed it in a saucepan until starting to brighten in color. I then added the garlic, bay leaf, and thyme. After about a minute, I put enough water to cover the celery, added some salt and pepper, and let it braise for about 15 minutes. While the celery braised, I made some creamy parmesan polenta. Once the braising liquid was almost cooked off, I added some tomato paste, mixed, and then added tomato sauce, parsley, and basil. I let the sauce simmer for about 10 minutes, cooked some bacon, and baked the eggs in the oven for 10 minutes.
Once everything was done, I plated the dish and enjoyed a successful breakfast challenge!
