Smooth Cauliflower Soup
I love cauliflower. It's a vegetable that looks like the bland cousin of broccoli and is often a second thought when thinking of what vegetable to make. What people miss when overlooking this species of brassica oleracea (same family as broccoli, kale, brussel sprouts, and collard greens) is a rich and smooth vegetable that is great roasted, fried, steamed, or in this case, included as the main part of a soup. In this recipe, I found a way to turn this white, floral looking veggie into a smooth and creamy soup that is simple, basic, and delicious. The dish only has 3 main components and takes less than an hour to prepare. I recommend this for those looking for a healthy soup that is big on flavor and simple to prepare.

Roasted Cauliflower
Cauliflower has long been an under appreciated vegetable. Less known than it's green cousin, broccoli, cauliflower has a milder taste, and works very well with a wide variety of tasty toppings. As a side or an app, cauliflower can shine in many different ways. For this dish, I made a roasted cauliflower with gremolata, an herb topping.

Roasted Cauliflower
As I’ve said in previous posts, I love cauliflower. It has a
milder flavor than broccoli and lends itself better to taking on the flavor of
seasoning. For the cauliflower on Thanksgiving, I did a repeat of a similar
cauliflower dish from my Turkey
Burger post. The cauliflower was delicious but sadly went under the radar
next to all of the other delicious items on the menu. I think cauliflower is
generally and underappreciated veggie, and while I had high hopes for fame and
accolades for the underdog veggie, we ended up having a lot left over. The sad
story of a vegetable gone unnoticed like a famous artist only appreciated
post-mortem; we’ll see how this story ends.

Move Over, Burger and Fries
I love a good burger and fries, but often times the fat and grease outweigh the deliciousness of a juicy beef burger and fried potatoes. Enter the turkey burger with roasted cauliflower. Turkey burgers can be tricky to make because they easily dry out, and you really can't undercook them because nobody wants to or should eat rare turkey meat. If done well, turkey burgers are a great alternative to beef.
