Snack Attack! Roasted Almonds

A really delicious and extremely easy snack is home roasted almonds. The other weekend, I was making a snack for a fun trip with my friends, and I realized I had a bag of raw almonds in my pantry. I decided to season and roast them. Almonds are a really healthy snack, and with a little bit of spice, they can be very delicious.

For the seasoning, I mixed 2 tablespoons of Turbinado sugar, 1 tablespoon of cumin, 1 teaspoon of cayenne pepper, 1 teaspoon of cinnamon, 1 teaspoon of turmeric, salt, and pepper. I mixed this up in a small bowl, tossed the almonds with half a cup of olive oil and the spice mix, and spread them on 2 baking sheets.

I pre-heated the oven to 375 and roasted the almonds for 20 minutes until they started to get darker in hue. I checked a few times by eating one and seeing if it was roasted enough. Once they had a nice crunch, I took them out.

The almonds were delicious. Everyone who tried them was amazed by how tasty they were, and they didn't take more than 30 minutes to make, only 5 minutes of active time. These are great for a snack to take to work or an impressive hors d'oeuvre for a dinner party.

Do I have to use raw sugar for this recipe? Would it work with regular sugar?

You can use regular sugar or brown sugar instead if you don't have raw. I like the flavor of raw sugar with the nuts, but any type would work.
