A Simple, Market Fresh Meal
Sometimes the simplest meals are the best. I was walking through the farmers market, and picked up a gorgeous selection of farm fresh veggies. I bought green and yellow squash, red onions, and radishes, cut them up and tossed them with olive oil, salt and pepper and roasted them for 30 minutes. The result was a colorful, flavorful, and simple meal.
To go along with these wonderful vegetables, I made some quinoa, a really nice and healthy whole grain, and a great alternative to rice, couscous, and other grains. I also bought some flounder, and pan fried the filets in olive oil, salt and pepper. I then served it with a squeeze of lemon.
The result was a meal that looked great, tasted delicious, and was extremely healthy and easy to make. Not every meal has to be a production to be beautiful, and this one was amazingly easy, and truly a visual delight.
